Easy Healthy Muffin



  • 50 g (1/4 cups) Butter
  • 50 g (1/5 cups) Applesauce
  • 50 g (1/5 cups) Honey
  • 100 g (1 cup) Flour
  • 1 tbsp Baking powder
  • 2 Eggs
  • Tips: add flavors such as lemonade, chocolate, vanilla, coffee or etc.

Turn on the oven to 350 F. Melt the butter. Mix the eggs with the honey. Add the butter, applesauce, and baking soda. Then add the flour. (If you want to you can add flavors).

Get 9-10 small muffin forms and spread them on a baking tray. Use a tablespoon, to add two scoops of the mixture into the muffin form. Then put the baking tray in the middle of the oven. Let them stay there for 10-12 minutes.




Portuguese Bacalhau à Brás – Inspired

After trying Bacalhau, I wanted to make it back home, in Norway. The dish has a lot of flavors just so you know.

  • 400g codfish
  • 200g Potatoes ( I used sweet potatoes)
  • 50g Bacon
  • 4 eggs
  • 1 onion
  • 1 dl (0.4 cups) olive oil
  1. Cut first the potatoes and the onion. Try to cut the potatoes into thin slices.  Warm the pan first, and then add the olive oil, the potatoes, and the onion. Fry the ingredients till they look golden-ish.
  2. Dry the codfish with a paper towel. Then cut the fish and the bacon. Add this to the frying pan with the other ingredients.
  3. When the bacon and the fish are cooked, and then add four beaten eggs. Stir till the eggs seem finished.
  4. Serve this with salads and olives.

Easy Hummus Recipe

Yo guys! I have been lately a fan of hummus. The first time I tried it, was at a restaurant. I found the taste and the consistency very interesting. So I decided to make hummus by myself.

You can use more spices such as herbs, garlic, etc. I am not a fan of the garlic taste so I skipped it.

Here is my twist on the recipe:


  • 250 g Chickpeas (cooked)
  • 1 tbsp Tahini
  • 1-2 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1/2 tsp Cummin
  • 2-3 tbsp Water
  • 2 tbsp Olive Oil
  • Optional: 2-3 garlic fed, bell pepper spice, etc.
The first thing I do is adding the chickpeas into my smoothie blender. Then I add the rest of the ingredients and blend it together!
Well, this was easy and here you go.



Gluten Free Cinnamon Rolls

Happy Sunday everybody.


Today I have been craving for cinnamon rolls. Since I am allergic to many things,  I tried to substitute some ingredients.

Well, here is the recipe:


  • 5 dl (2 cups) Oatmeal flour (can also use almond flour)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1.6 dl (2/3 cup) milk
  • 1 tbsp honey


  • 1 big ripe mashed banana (can also substitute with apple sauce)
  • 2 tbsp melted coconut oil
  • 2-3 tsp cinnamon


I use honey, but you can also mix powdered sugar, milk and vanilla essence for the icing.

  1. Preheat the oven to 200 C or 350 F.
  2. Mix the dry ingredients together (Oatmeal flour, baking powder, salt)
  3. Add honey and milk.
  4. Use your hands to beat the dough together. Then use a rolling pin to roll it into a rectangle.
  5. For the filling use a small bowl. Mash the banana and add the melted coconut oil and cinnamon.
  6. Spread the filling over the dough and then roll it into a cinnamon roll shape. Then cut the dough into 10ish cinnamon rolls.
  7. Let it be in the oven 20-30 minutes.
  8. Put the honey or icing over after they are finished.




Cream Cheese Pancake

I love experimenting with food. So this time I have tried to make cream cheese pancake (I have also tried banana pancake which is also good).



(I love bacon and avocado… so I was craving for they)



  • 60g cream cheese
  • 1 tsp honey
  • 2 eggs
  • cinnamon

So what you do is beat the cream cheese and the eggs together or you can use a blender. After, you can add the rest of the ingredients. Then you fry the mixture in a frying pan.

(Serving tips: bacon and avocado, berries, jam or jelly, or plain)

Flax Seed Bread

I am a bread lover. Since that day when I figured out that I had histamine intolerance I tried to avoid bread. But I have been craving them lately.  So then I figured out why not make my own bread?

(PS! This bread recipe is not for people with histamine intolerance. Flax seed contains histamine, but this bread is so delicious worth mention the recipe.)

4,8 dl (350 g/ 2,02 cups) flax seed
1 tbsp baking soda
1 tsp salt
4 tbsp-5tbsp Honey
5 eggs
1,2 dl (0,48 cups) water, or milk
0,8 dl (0,32 cups) oil, or melted butter
Then add some spice or other seeds if you like too. I added sunflower seed.


  1. Preheat the oven to 175 degrees Celsius/ 347 degrees F!
  2. First, you mix all the dry ingredients. (Baking soda, flax seeds, and salt) If you don’t have flax seed flour you can use a food processor and make flour out of the flax seeds.
  3. Then add one egg at the time. While you are mixing it together.
  4. Add the rest of the ingredients.
  5. Let the bread stay in the oven for 20 minutes or more.
