Easy Healthy Muffin



  • 50 g (1/4 cups) Butter
  • 50 g (1/5 cups) Applesauce
  • 50 g (1/5 cups) Honey
  • 100 g (1 cup) Flour
  • 1 tbsp Baking powder
  • 2 Eggs
  • Tips: add flavors such as lemonade, chocolate, vanilla, coffee or etc.

Turn on the oven to 350 F. Melt the butter. Mix the eggs with the honey. Add the butter, applesauce, and baking soda. Then add the flour. (If you want to you can add flavors).

Get 9-10 small muffin forms and spread them on a baking tray. Use a tablespoon, to add two scoops of the mixture into the muffin form. Then put the baking tray in the middle of the oven. Let them stay there for 10-12 minutes.




Gluten Free Cinnamon Rolls

Today I have been craving for cinnamon rolls. Since I am allergic to many things,  I tried to substitute some ingredients.

Well, here is the recipe:


  • 5 dl (2 cups) Oatmeal flour (can also use almond flour)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1.6 dl (2/3 cup) milk
  • 1 tbsp honey


  • 1 big ripe mashed banana (can also substitute with apple sauce)
  • 2 tbsp melted coconut oil
  • 2-3 tsp cinnamon


I use honey, but you can also mix powdered sugar, milk and vanilla essence for the icing.

  1. Preheat the oven to 200 C or 350 F.
  2. Mix the dry ingredients together (Oatmeal flour, baking powder, salt)
  3. Add honey and milk.
  4. Use your hands to beat the dough together. Then use a rolling pin to roll it into a rectangle.
  5. For the filling use a small bowl. Mash the banana and add the melted coconut oil and cinnamon.
  6. Spread the filling over the dough and then roll it into a cinnamon roll shape. Then cut the dough into 10ish cinnamon rolls.
  7. Let it be in the oven 20-30 minutes.
  8. Put the honey or icing over after they are finished.
